微波消解-原子吸收法测定辣条中铅的含量

目的了解济宁市市售辣条中重金属铅的含量,评估其污染状况,为保障食品安全提供科学依据。方法对济宁市市售辣条随机抽取50份样本,采用微波消解法处理样品,石墨炉原子吸收分光光度法测定样品中铅的含量,并对消解试剂和基体改进剂进行了选择和优化。结果在优化实验条件下,吸光度与浓度呈良好的线性关系(r=0.994),加标回收率为92.26%~97.41%,相对标准偏差(RSD)为3.54%,用该方法检测样品,重金属铅均有检出,检出率为100%。检测结果参照GB 2762—2012《食品中污染物限量》中规定的豆类制品铅的含量应≤0.5 mg/kg,50份检测样品的总合格率为88%。结论该方法样品处理效率高、简单、快速、准确,可用于辣条中铅的测定。辣条样品中铅都有检出,说明有不同程度的积累,由于铅在体内具有蓄积性,相关部门应引起足够的重视。 Objective To understand the content of heavy metal lead in spicy hotpot in Jining City and evaluate its pollution status and provide a scientific basis for food safety. Methods Fifty samples were randomly selected from commercial spicy hotpot in Jining City. The samples were treated by microwave digestion method. The content of lead in samples was determined by graphite furnace atomic absorption spectrometry. The digestion reagents and matrix modifiers were selected and optimized. Results The results showed that there was a good linear relationship between absorbance and concentration (r = 0.994), the recoveries were 92.26% ~ 97.41% and the relative standard deviations (RSDs) were 3.54% under the optimum conditions. Have been detected, the detection rate was 100%. The test results refer to the content of lead in legumes specified in GB 2762-2012 “Limits of Contaminants in Food” should be ≤ 0.5 mg / kg, and the total qualification rate of 50 test samples is 88%. Conclusion The method of sample processing efficiency, simple, fast and accurate, can be used for the determination of lead in spicy. Spicy samples have been detected in the lead, indicating that there are different levels of accumulation, due to lead in the body has accumulated, the relevant departments should cause enough attention.
