目的:了解市售鸡蛋的沙门菌污染情况,为鸡蛋的贮存保鲜和食用提供卫生学方面的参考。方法:采用测试片法和国标方法对鸡蛋蛋壳和蛋内容物中的沙门菌进行检测,比较两种检测方法的差异。结果:检测蛋壳表面时,两种检测方法的检测结果完全一致,符合率达到了100%;检测鸡蛋内容物时,用国标方法检测出了6个阳性,而用测试片法则检测出了7个阳性,后者比前者阳性检出率要高出2.5个百分点,两种方法的阳性符合率为85.7%,阴性符合率高达100%。阳性样品所含的菌落数量,测试片法的检测结果要比国标方法的稍少,但也均能达到80%以上。结论:测试片法可以应用于鸡蛋等食品中沙门菌的检测初筛,可以考虑作为国标方法的补充。
Objective: To understand the contamination of Salmonella in commercial eggs and to provide health reference for the storage, preservation and consumption of eggs. Methods: Salmonella in the eggshell and egg contents were tested by the test strip method and the national standard method. The differences between the two methods were compared. Results: When the surface of eggshell was tested, the detection results of the two methods were identical and the coincidence rate reached 100%. Six 6 positive samples were detected by the national standard method while the content of the chicken eggs was detected by the test method Positive, the latter positive detection rate than the former 2.5 percentage points higher, the two methods of positive coincidence rate of 85.7%, the negative coincidence rate of up to 100%. The number of colonies contained in the positive samples, the test results of the test method is slightly less than the national standard method, but also can reach more than 80%. Conclusion: The test method can be applied to the detection of Salmonella in eggs and other foods screening, can be considered as a supplement to the national standard method.
