1 绪言烤烟的烘烤,就是将成熟叶片,在适当的温湿度条件下,使叶片高分子成分分解为低分子物质,并使其浓缩,在发生香气状态下,进行脱水定色的处理过程。从外观上看,叶绿素分解了,在整个叶片变为鲜黄色状态时,使其干燥固定。松山指出:烤烟因品种不同,叶绿素分解速度各异,如 MC1号(以下简称 MC1)和Coker319(以下简称 C—319)等,叶绿素的分解速度,即变黄速度快(易变黄),变黄结束到糊片始期的时间长(变黄持续性),因而,叶片脱水与变黄以快速同时平行进行。
