本文从蛋白质含量和蛋白质分两方面,评价了大骨节病病区玉米、小麦、大豆及其混合食物的蛋白质营养价值。结果表明:病区这三种粮食的蛋白质营养价值,以大豆最高、小麦次之、玉米最低;病区三种粮食之间的蛋白质营养价值的差异,较同一种粮食的病区与非病区之间的差异大;病区玉米和小麦组成的混合食物,是一种蛋白质营养价值较低的食物;病区含10—20%大豆的谷豆混合食物的蛋白质供给量和蛋白质分,较玉米、小麦混合食物分别高25—74%和3—8%。文中还对病区这三种粮食的配合比例,和改善当地村民膳食蛋白质供应问题,进行了初步探讨。
This article evaluates the protein nutritional value of corn, wheat, soybeans and their mixed foods from Kashin-Beck disease ward in terms of protein content and protein content.
