在中国地方菜系中,山东菜(又称“鲁菜”)历来占有重要地位,、影响遍及京津和整个北方地区.山东菜的主要组成部分是济南菜和胶东菜.胶东菜因起源于福山(原为福山县,今为烟台市福山区),也称做“福山菜”,因为烟台港口名声远播,又叫“烟台菜”.福山作为胶东菜的发源地.其烹任技术见诸文字记载已有七百年的历史,而且代代相传,历久不衰.长期以来.福山作为“烹饪之乡”,在继承、挖掘、发展、创新的原则下,使胶东菜的风味流传国内外.目前.福山人在世界各地开设的餐馆有700多家,对鲁菜的传播与发展作出了极大的贡献.以福山为代表的胶东菜所以能在饮食文化中占如此重要地位,是因为它有不可替代的个性,这便是以海味菜品为主,偏重清淡,讲究保持原味,强调一个“鲜”宇.有记载的福山海味菜谱约有300余种,目前继承下来的也有100余种,堪称为“海味大观”.
