我国是茶的故乡,茶文化也有着悠久的历史。从古至今,人们都认为泡茶所用的茶叶是茶水质地好坏的关键所在,殊不知,泡茶所用的水才是茶味之根本。“无水不可与之论茶也”。喝茶的人都知道,水与茶的关系总是相得益彰,甚至能用“水为茶之母”来形容。明代张大复在《梅花草堂笔谈》中谈到:“茶性必发于水,八分之茶,遇十分之水,茶亦十分;八分之水,试十分之茶,茶只八分。”可见水质能直接影响茶汤品质。水质不好,不能正确反映茶叶的色、香、味,尤其对茶汤滋味影响更大。因此,历史上就有“龙井茶,虎跑水”、“梦顶山上茶,扬子江心水”之说。名泉伴名茶,好茶配好水,则美上加美。
