冰花、刨冰是冷饮食品的新品种,近年在我区发展很快,为了解这类冷饮食品的卫生质量状况,加强卫生管理,我们于1991年9月10日至15日对南宁市冰花,刨冰食品及食具进行了专题调查,现将结果总结如下: 调查方法和内容(一)调查点的确定:在南宁市现有160多家冰花、刨冰店中,随机选择101家作为调查点。(二)调查内容:主要根据卫生部颁发的《冷饮食品卫生管理办法》和区卫生厅颁发的《雪条厂、冰室卫生许可证发放标准》,对冰花、刨冰食品生产加工卫生、个人卫生及卫生设施等进行调查,并在每个冷饮店抽检冰花或刨冰1份,检微生物指标,抽检食具3份,检大肠菌群。(三)评价方法:按照冷饮食品国家卫生标准 GB2759—81散装兑制饮料(果味和果汁类)、含乳蛋或含豆类冷冻食品的卫生规
