[目的]掌握与炊事员工作有关的疾病及其影响因素。[方法]采用职业流行病学调查方法,对400名炊事员和322名非炊事员工作有关的疾病及其影响因素进行调查。[结果]炊事员主要疾病为循环系统和呼吸系统疾病,分别占全病因的33.61%和28.92%,与对照组比较,标化发病比分别达1.93、1.58(P﹤0.05)。选择工种、工龄等11个变量进行单因素非条件Logistic回归分析,控制年龄、性别等因素后,作业环境、工龄在模型中均具有统计学意义(P﹤0.05),相对危险度前者分别为1.39、1.18,后者分别为1.20、1.50。[结论]开展炊事员工作有关疾病的预防,重点在改善劳动卫生环境上。
[Objective] To master the diseases related to the work of cooks and their influential factors. [Methods] The occupational epidemiological survey method was used to investigate the diseases related to the work of 400 cooks and 322 non-cooks and their influencing factors. [Results] The main diseases of cook were circulatory system and respiratory diseases, accounting for 33.61% and 28.92% of the total etiology respectively. The standardized incidence rates were 1.93 and 1.58 (P <0.05) respectively compared with the control group. Select the type of work, length of service and other 11 variables univariate non-conditional Logistic regression analysis, control of age, gender and other factors, operating environment, length of service in the model were statistically significant (P <0.05), the relative risk of the former were 1.39 , 1.18, the latter respectively 1.20,1.50. [Conclusion] The prevention of illness related to the work of the cooks should be carried out, with emphasis on improving the environment of labor hygiene.
