目的研究鹿茸抗氧化多肽酶解最优工艺条件。方法以酶解水解度和DPPH自由基清除率为指标,在单因素实验基础上,采用均匀设计法优化鹿茸抗氧化多肽酶解工艺。结果最优工艺为:酶解时间58min,酶添加量5.0U/mg,底物浓度11mg/ml,酶解温度60℃,p H值6。验证实验显示该条件下鹿茸多肽DPPH自由基清除率为(71.5±0.9)%,比预测值稍低,基本相符。结论均匀设计法优化的鹿茸抗氧化多肽酶解工艺稳定、可行,获得了抗氧化性较好的鹿茸多肽,对开发高附加值的鹿茸产品具有重要的意义。
Objective To study the optimal conditions of anti-oxidation polypeptide antler in antler. Methods Based on the single factor experiments, the enzymatic hydrolysis degree and DPPH radical scavenging rate were used as indices to optimize the antler antioxidant enzymatic hydrolysis process of antler antler by uniform design. Results The optimum conditions were: enzymolysis time 58min, enzyme dosage 5.0U / mg, substrate concentration 11mg / ml, hydrolysis temperature 60 ℃, p H value 6. The validation experiments showed that the DPPH radical scavenging rate of pilose antler polypeptide was (71.5 ± 0.9)%, which was slightly lower than the predicted value, basically consistent. Conclusion The uniform design method of anti-oxidant peptide antler antler hydrolysis process is stable and feasible, access to a good antioxidant antler peptide, the development of high value-added antler products is of great significance.
