唐朝人吃饭,必加蔬菜。白居易《答崔侍郎钱舍人书问因继以诗》有云:“日暮两蔬食,日中一闲眠。便是了一日,如此已三年。”就反映了当时的饮食习惯。唐代蔬菜的供应十分丰足,人们往往成盘累碟地大饱口福。杜甫《园》诗云:“畦蔬绕茅屋,自足媚盘餐。”陆龟蒙《食》诗云:“水蔬山药荐盘餐”。由于佛教广为流行,唐人开始斋戒蔬食,奉其信仰。白居易《斋毕开素当食偶吟》诗云:“前月事斋戒,昨日散道场。以我久蔬素,加笾仍异粮。”又《晚起闲行》诗云:“午斋何俭洁,饼与蔬而已。”蔬食在日常生活中的比重已明显偏高。
