建立了大蒜中挥发性成分的气相色谱- 四级杆飞行时间串联质谱(GC-QTOF MS)检测方法。大蒜样品经自动顶空固相微萃取后进样采集,利用气相色谱的保留指数、四级杆飞行时间串联质谱的高分辨质谱数据以及软件自动解卷积后,谱库检索对大蒜中的挥发性成分进行鉴定,共鉴定出挥发性成分44 种。结果表明,气相色谱的高分离度和四级杆飞行时间串联质谱的高分辨率可以有效地对复杂样品中的挥发性成分进行检测,结合多维数据定性技术能够显著提高未知成分鉴别的准确性。“,”A gas chromatography-tandem mass spectrometry (GC-QTOF MS) method for the determination of volatilerncomponents in garlic was established. The samples of garlic were collected by automatic headspace solid phase microextraction.rnThe volatile components of garlic were identified by gas chromatography retention indices, high resolution mass spectrometry datarnof four-stage rod time of flight tandem mass spectrometry and software automatic deconvolution. A total of 44 volatile componentsrnwere identified in garlic . The results show that the high separation degree of gas chromatography and the high resolution of fourstagernrod time-of-flight tandem mass spectrometry can effectively detect the volatile components in complex samples. Combined withrnmultidimensional data qualitative technology, the accuracy of identification of unknown components can be significantly improved.
