中国古代大量的茶叶诗歌是我国灿烂文化和茶叶历史的一库宝藏,其中有的表达茶树生长情况,有的介绍采制技艺,有的评论茶的品饮方法、功效等,内容丰富,记述真切,是深入研究我国茶叶历史必不可少的重要资料。如北宋诗人梅尧臣在《答建州沈屯田寄新茶》的诗中,提到了当时采下的鲜叶,经过加工焙成为“紫饼”的史实。欧阳修《送龙茶与许道人》的诗中,称颂龙茶的品质,不是凡茶所可比拟的。唐代刘禹锡在《西山兰若试茶歌》中,描述了这里寺庙中,茶叶现摘现炒,满室茶香的情况,反映绿茶的第一道工序杀青,唐代即已应用。又如诗圣李白的《答侄僧中孚赠玉泉仙人掌茶》诗中,曝(晒)成仙人掌茶的诗句就含有现行晒青之意,这可以释为直接晒干,也可以理解为先经过晒后再行加工。这些诗词中即兴提到的茶事内容,往往都是史籍所
