目的为掌握我国腌腊肉制品中违法添加有机磷农药的状况。方法依据随机抽样原则,2013年在全国9省市的餐饮店、农贸市场、商店超市和网店采集腌腊肉制品共863份,通过气相色谱-质谱法(GC-MS)对12种有机磷农药残留进行检测。结果全国863份样品的有机磷农药总检出率为4.40%(38/863),其中敌敌畏检出率最高,为4.17%(36/863),且存在同一样品同时检出多种有机磷农药的情况;采样地区中云南的检出率最高,为24.27%(25/103),且农贸市场中有机磷农药检出率高于8%。结论市售腌腊肉制品中存在违法添加有机磷农药的情况,且以敌敌畏和敌百虫较为严重。
The purpose of grasping China’s cured meat products illegally added organophosphorus pesticide status. Methods Based on the principle of random sampling, a total of 863 samples of cured meat products were collected from restaurants, farmers’ markets, store supermarkets and online stores in 9 provinces and cities nationwide in 2013. Results The total detection rate of organophosphorus pesticides in 863 samples was 4.40% (38/863), of which the highest detection rate of dichlorvos was 4.17% (36/863), and the same sample was detected simultaneously with various organophosphorus pesticides . The highest detection rate was 24.27% (25/103) in Yunnan sampling area, and the detection rate of organophosphorus pesticides in the farmer’s market was higher than 8%. Conclusion There are illegal additions of organophosphorus pesticides to marinated cured meat products, and dichlorvos and trichlorfon are more serious.
