①目的了解中国远洋船员航海期膳食与营养状况。②方法对182名船员进行了航海期膳食调查,体格检查和实验室检查。③结果航海期船员人均热能摄入量为13.74MJ/d,蛋白质108.3g/d,维生素A,B2,C和钙摄入量不足。白细胞抗坏血酸含量和红细胞核黄素含量分别为1.41±0.68mg/100g和139.1±65.3μg/L,都低于正常值标准。4h尿负荷试验,维生素B1,B2,C和尼克酸不足人数分别为31.3%,42.2%,78.9%和5.6%.船员维生素C和B2缺乏症发生人数为51.2%和37.2%.④结论远洋船员航海期食物结构不合理,膳食不平衡,身体营养状况较差。
①Objectives To understand the dietary and nutritional status of Chinese ocean going crew at sea. ② Methods A total of 182 seafarers were enrolled in the sea-going meal survey, physical examination and laboratory examination. ③ Results The crew’s per capita caloric intake was 13.74 MJ / d at sea level, 108.3 g / d protein, and vitamin A, B2, C and calcium intake were inadequate. Leukocyte ascorbic acid content and erythrocyte riboflavin content of 1.41 ± 0.68mg / 100g and 139.1 ± 65.3μg / L, respectively, are lower than the normal standard. 4h urine load test, the number of vitamin B1, B2, C and niacin deficiency were 31.3%, 42.2%, 78.9% and 5.6%. Crew vitamin C and B2 deficiency occurred in 51.2% and 37.2% of the population. ④ Conclusion Ocean-going crew’s food structure at sea is not reasonable, the diet is not balanced, and the nutritional status of the body is poor.
