测定植物油的酸价和过氧化值是检验油脂是否变质的重要指标之一。油脂的酸价高,表明该品游离脂肪酸多,过氧化值高则表示油脂酸败。新鲜油的酸价低、过氧化值在0.03%以下。国家标准局1982年颁发的《中华人民共和国食品卫生标准》中明确规定食用植物油酸价不得超过4,过氧化值不得超过0.15%。其检验方法规定采用常规滴定法,但用规定方法测定植物油的酸价和过氧化值需以酚酞和淀粉作指示剂,由于植物油本身略带黄色,指示终点颜色不易辨明,误差较大,所需时间。较长我们试用ZD-2型自动电位滴定计对植物油的酸价和
