Fat-soluble vitamin E (V_E) is an essential nutrient for humans. The minimum daily requirement for V_E, although not well understood, depends on the amount of unsaturated fatty acids and iron consumed by the diet. V_E’s main role is as an antioxidant. It participates in the metabolism of glutathione and may also be involved in the metabolism of nucleic acids.
