烹饪由来已久。《易经》:“以木巽火,烹饪也。”大意说顺着风把木柴点燃,进行煮熟食物。所以,烹饪又称烹调。是一种食物熟化方法。后来引伸为整个烹饪技术和文化,包括炊具、燃料、食物、调料、烹调方法。本处所讲的是史前的烹饪方法。一、烧烤法自从人类开始用火之后,就掌握了烧烤法。这是最早出现的烹饪方法。古代称为炙,具体又分为燔、炮、炙等。现在分别叙述。(一)直烧法最早的熟化方式,是在没有炊具的情况下进行的,所以只能直接把食物放在火上烧烤,而当时的主要食物是采集品和猎物,也便于烧烤。云南拉枯族、台湾高山族、西藏珞巴
