25份野红燕麦选系的籽实去壳后,去壳燕麦徒手解剖为胚芽、小盾片、麸皮与淀粉胚乳,各部分分别称重后用以化验蛋白质,并以一份普通燕麦栽培品种马克顿为对照。野红燕麦的去壳燕麦产量以及大小均低于马克顿。野红燕麦选系蛋白质百分率较高,但由于去壳燕麦较小,每粒去壳燕麦蛋白质含量则较低。野红燕麦去壳燕麦总重中大部分是淀粉胚乳,占58.0%,麸皮占39.1%,而胚芽与小盾片部分只占很少比例,这些数值与马克顿类似。尽管在较大去壳燕麦中胚乳部分比例高,麸皮、胚乳两者的重量与去壳燕麦大小呈正相关。淀粉胚乳的蛋白质百分率是最低的,除一些选系外,野红燕麦各部分蛋白质百分率比马克顿高。高蛋白选系表现为麸皮与淀粉胚乳的蛋白质百分率较高。作为单一部分的麸皮,比其他三部分可含有籽实蛋白质总量最大比例。
After the seeds of 25 wild red oat strains were peeled, the dehulled oats were hand dissected into germ, scutellare, bran and starch endosperm. The parts were separately weighed and used for assaying the protein, and an ordinary oat cultivar Markton as a control. Oat production and size of wild red oats are lower than that of Maxton. Wild red oat selection has a higher percentage of protein, but lower protein content per husked oat due to smaller husked oats. Most of the total weight of wild oat hulling oats is starchy endosperm, accounting for 58.0%, bran accounted for 39.1%, while embryos and scutellar parts only account for a small proportion of these values and Markton similar. Despite the high proportion of endosperm in the larger shelled oats, the weight of both bran and endosperm was positively correlated with the size of the shucked oats. The percentage of protein in starchy endosperm is the lowest. Except for some selected lines, the percentage of protein in each part of wild red oats is higher than that of Maxton. High protein lines showed a higher percentage of protein in bran and starch endosperm. Bran, as a single part, may contain the largest proportion of the total amount of seed protein over the other three parts.
