[目的]掌握海安县餐饮业餐饮具消毒状况,探讨其影响因素,提出改进建议。[方法]按《食(饮)具消毒卫生标准》GB14734-1994进行消毒效果检测和评价。[结果]调查318家餐饮单位各类餐饮具1995份,合格1625份,合格率81.45%。量化分级A级餐饮具消毒合格率高于B、C级,小餐具合格率高于大、中、杯具。[结论]应加强餐饮业餐饮具消毒和餐具消毒服务机构的监管力度,采取综合措施,提高餐饮具卫生消毒质量,严防食物中毒的发生。
[Objective] To master the disinfection status of catering tableware in Hai’an County, discuss its influencing factors and put forward suggestions for improvement. [Method] According to “food (drink) with disinfection health standards” GB14734-1994 disinfection effect detection and evaluation. [Results] The survey of 318 catering units of various types of tableware 1995, pass 1625, pass rate of 81.45%. Quantified grading A-class tableware disinfection pass rate higher than B, C-class, small tableware pass rate higher than in large, medium and cup. [Conclusion] We should strengthen the supervision of tableware disinfection and tableware disinfection service agencies in the catering industry and take comprehensive measures to improve the quality of tableware hygiene and disinfection, and prevent the occurrence of food poisoning.
