2011年-2013年泰安市婴幼儿食品食源性致病菌污染状况调查

目的了解泰安市婴幼儿食品食源性致病菌污染状况,为婴幼儿食源性疾病预警及食品安全管理提供科学依据。方法依据GB4789-2010及GB/T4789-2003检测程序对婴幼儿食品(包括奶粉、米粉、营养饼干、面制品4类)进行腊样芽孢杆菌、阪崎肠杆菌、金黄色葡萄球菌的分离培养及鉴定。结果 2011年-2013年220份样品中共检出致病菌34株,总检出率为15.5%(34/220)。其中腊样芽孢杆菌检出27株,检出率为12.3%(27/220);阪崎肠杆菌检出5株,检出率为2.3%(5/220);金黄色葡萄球菌检出2株,检出率为0.9%(2/220),不同致病菌检出率差异有统计学意义(χ2=34.668,P<0.001)。奶粉、米粉、营养饼干、面制品4类婴幼儿食品的致病菌检出率分别为:22.9%(16/70)、14.3%(8/56)、10.5%(6/57)、10.8%(4/37)。结论泰安市婴幼儿食品存在食源性致病菌的污染,其中奶粉的污染较为严重,腊样芽孢杆菌是主要病原菌。 Objective To understand the status of food-borne pathogenic bacteria in infants and toddlers in Taian and to provide a scientific basis for early warning of food-borne diseases and food safety management in infants and toddlers. Methods The isolation and culture of Bacillus cereus, Enterobacter sakazakii and Staphylococcus aureus were carried out on infant food (including milk powder, rice noodles, nutrition cookies and flour products) according to GB4789-2010 and GB / T4789-2003 testing procedures Identification. Results Totally 34 pathogens were detected in 220 samples from 2011 to 2013, with a total detection rate of 15.5% (34/220). Among them, 27 strains of Bacillus cereus were detected, the detection rate was 12.3% (27/220); five strains of Enterobacter sakazakii were detected, the detection rate was 2.3% (5/220); Staphylococcus aureus was detected 2 The detection rate was 0.9% (2/220). The detection rate of different pathogenic bacteria was significantly different (χ2 = 34.668, P <0.001). The detection rates of pathogens of four kinds of infant foodstuffs such as milk powder, rice noodle, nutritional biscuit and flour product were respectively 22.9% (16/70), 14.3% (8/56), 10.5% (6/57) and 10.8% (4/37). Conclusion There are food-borne pathogenic bacteria in infant food in Tai’an City. Among them, the contamination of milk powder is more serious, and Bacillus cereus is the main pathogen.
