1980~1981两年分析了金冠苹果成花短枝和叶芽短枝的芽和叶片内中性氨基酸含量的变化。在酸性、碱性和中性三类氨基酸中,在花芽大量开始分化期,以中性氨基酸含量最多,占总量的比例,芽内平均为52%,叶内平均为63~65%,两年趋势一致。在花芽大量开始分化时,花芽内含量高于叶芽,叶芽短枝叶片内含量高于成花短枝叶片。按占氨基酸总量的百分率分析,花芽与叶芽内中性氨基酸所占百分率无明显差异。在所测定的12种中性氨基酸中,以亮氨酸含量最高。从成花前10~20天到花芽大量开始分化,花芽内各种氨基酸含量上升,叶内含量下降。在花芽大量开始分化时,花芽内各种中性氨基酸占氨基酸总量的比例,两年测定的结果,大部分比较稳定;而叶芽仅丙、甘两种氨基酸较稳定。在叶片中的情况则相反。
