国外不少作者认为胃癌同食入盐腌食品有关。Hirayama(1967)在日本调查发现,胃癌病例每天摄取盐腌食品的频率高于对照组。Haenszel等(1972)对220例日本胃癌病人进行病例对照研究,结果表明吃咸鱼以及盐渍蔬菜对胃癌发病均有较高的危险度。据Correa氏(1975)推测,高盐食物可能破坏胃粘膜屏障,从而使胃粘膜易遭致癌物质的作用。
Many foreign authors think that gastric cancer is related to the salt intake of food. Hirayama (1967) in Japan survey found that stomach cancer cases daily intake of salted foods more frequently than the control group. Haenszel et al. (1972) conducted a case-control study of 220 Japanese patients with gastric cancer. The results showed that salted fish and salted vegetables had a higher risk of gastric cancer. According to Correa’s (1975) speculation, high-salt foods may damage the gastric mucosal barrier, making gastric mucosa susceptible to carcinogenic substances.
