为研究菌丝培养温度对菌丝生长生理的影响及出耳期耳片的高温抗性,提高黑木耳出耳抗性和产品品质,实验设计5组不同发菌温度,对黑木耳菌丝培养温度、菌丝生理与出耳期耳片耐高温性展开研究,结果表明,15℃、20℃发菌菌丝生长速度较对照组(25℃)慢,但菌丝粗壮,培养期感染杂菌少,酶活性高。低温培养的菌丝出耳期抗杂菌污染能力强,耳片不易流耳。低温发菌有利于提高黑木耳出耳耐高温性。
