花生油含丰富的多不饱和脂肪酸,营养价值较高,是最常用的食用植物油之一。目前假由于市场出现的花生油掺假现象渐增多,在日常食品卫生监督中,要解决大量的花生油掺,问题,需要有一快速、简便的方法。本文介绍的对几种食用油折射率,凝点,比重等项的综合检查,可基本确定掺假油的种类及掺入比例,制成标准曲线后查对则更为方便。
