目的了解大同市学校食堂食品安全现状,发现存在的主要安全风险及薄弱环节,制定有效的防控措施,预防食源性疾病和食物中毒的发生。方法采用现场检查和调查,对大同市范围内45所学校的61个食堂的一般卫生状况、卫生设施和管理设施进行调查。结果 61个学校食堂卫生许可证持证率为95%,从业人员健康证持证率为92%,建立食品安全领导小组占86.9%,食品安全管理制度健全率占82.0%,食物中毒应急处理预案占86.9%,食堂布局合理合格率达70.5%,防尘防蝇防鼠设施合格率为96.7%,食品冷藏设施合格率为90.2%,消毒保洁设施合格率为54.1%,食品留样达标率为80.3%,食品采购索证达标率为73.8%,食品冷藏管理达标率为67.2%,餐厨废弃物管理达标率为62.2%。结论大同市学校食堂卫生设施薄弱及管理不规范,存在食品安全隐患,应加强监督管理,有效防范学校食物中毒的发生。
Objective To understand the status quo of food safety in school cafeteria in Datong and to find out the main safety risks and weak links existing in the school cafeteria in Datong and to establish effective prevention and control measures to prevent the occurrence of foodborne diseases and food poisoning. Methods On-the-spot inspection and investigation were conducted to investigate the general sanitation, sanitary facilities and management facilities of 61 canteens in 45 schools in Datong. Results 61 school canteens health permit certificate rate was 95%, practitioners health certificate rate was 92%, the establishment of the food safety leading group accounted for 86.9%, food safety management system accounted for 82.0% sound rate, food poisoning emergency plan Accounting for 86.9%. The reasonable passing rate of canteens layout was 70.5%. The passing rate of anti-dust and anti-rodent anti-rat facilities was 96.7%. The passing rate of food refrigerating facilities was 90.2%. The pass rate of disinfecting and cleaning facilities was 54.1% 80.3%, food procurement compliance rate was 73.8%, food refrigeration management compliance rate was 67.2%, food waste management compliance rate was 62.2%. Conclusion The health facilities of school canteens in Datong City are not standardized and there are food safety hazards. Supervision and management should be strengthened to effectively prevent food poisoning in schools.
