竹笋的保鲜,我国主要是考虑如何延长罐头笋的加工时间,特别是如何保鲜毛竹春笋,这是毛竹产区领导和群众燃眉之急的问题。这在日本是采用冷库超低温(-40℃)贮藏保鲜。现将有关方法介绍如下,供有关单位参考。一、日本的竹笋保鲜。主要措施:(1)减少机械损伤,减弱呼吸作用和病菌侵染。要求农民提高挖笋质量,并小心搬运。破损笋另行分装。采用纸箱包装,减少装运中的机械损伤。(2)防止失水过多。采用袋内袋外空气有一定程度交换的尼龙袋包装鲜笋。
