小麦是世界也是我国主要粮食作物。小麦籽粒的蛋白质含量及其品质如何,直接关系到人民的身体健康和食品工业的发展。小麦籽粒蛋白质含量已引起作物育种家、谷物化学工作者和食品加工部门的广泛关注。小麦品质育种已列为国家“七·五”期间的重大攻关项目。有关小麦品质遗传、生理生化的文献资料越来越多。新疆小麦籽粒蛋白质含量和氨基酸的分析资料也有零星报道。我们征集了全疆各地(州)、县(市)的主要栽培品种,作了籽粒蛋白质含量及其组分和氨基酸的分析,同时对与营养品质有关的要素作了初步研究,以期对新疆小麦的品质概貌有一个基本了解。
Wheat is the world’s main food crop. The protein content of wheat grain and its quality is directly related to the people’s health and the development of the food industry. The protein content of wheat grains has caused widespread concern among crop breeders, grain chemists and food processing authorities. Wheat quality breeding has been listed as a national key project during the “Seventh Five-Year Plan” period. There is a growing body of literature on the genetic, physiological and biochemical aspects of wheat quality. Xinjiang wheat grain protein content and amino acid analysis data also sporadically reported. We collected the main cultivars of Xinjiang (prefecture) and county (city) of Xinjiang and made the analysis of the protein content and its components and amino acids in grain. At the same time, we made a preliminary study on the elements related to nutritional quality, There is a basic understanding of the quality profile.
