一、概述:抗坏血酸即维生素C,又称丙维酸(Cevi-tamic acid),或己糖醛酸(Hexuronic acid),是—种无气味、白色的结晶体,略有酸味。它含于新解的蔬菜、果实、莓果等食品中。测定抗坏血酸的含量,是基于它具有还原性,这种还原性是由于抗坏血酸的内酯环容易通过去氢作用,生成二酮基。抗坏血酸易于氧化为去氢抗坏血酸,此物有同样的生理作用,所以在检验时,也应测定去氢抗坏血酸的含量。二、通用的检验方法:关于抗坏血酸和去氢抗坏血酸的分析法,各国药典、食品化学分析以及卫生化学分析大都采用下列各法。
