我国蛋品传统加工历史悠久,但我国蛋品加工业目前却处于培育阶段。生产的制品只有冰蛋品、干蛋品、腌制品三大类,家用蛋液及其制品的生产还属空白。由于加工技术落后,加工品种单一,未能形成品牌优势。总体上看,我国在蛋资源质量控制、系列禽蛋制品加工技术与设备方面还落后于美、日、法、德、意等发达国家。2001年我国蛋品加工量为6万吨,仅占全国禽蛋总产量的0.26%。2001年我国禽蛋产量占世界总产量的43.1%,其中鸡蛋产量1988万吨,占世界总产量的37.9%,位居世界第一位。1998年~2001年全国蛋鸡场由1060个上升到1250个,增长17.9%,其集约化程度达30%。2002年,我国禽蛋总产量为2570.4万吨,人均占有量为18.13公斤,这是自1985年我国禽蛋产量跃居世界第一后,连续18年保持世界第一产蛋大国的地位,人均占有量也大大超过了世界平均水平,禽蛋的消费和人均占有量也超过了世界平均水平。蛋品工业在我国工农业生产中扮演着重要的角色。但随着社会主义市场经济的发展和人民生活水平的逐渐提高,人们对蛋品业的要求越来越高。蛋品加工业滞后,现代化程度低下,已严重制约我国禽蛋业的发展。我国蛋品加工转化程度仅有0.26%,远低于发达国家达40%的水平,我国蛋品加工的空间十分广阔。无疑,蛋品业的市场和效益空间是巨大的。如?
