一、扩种水稻是我国北方发展粮食生产的必然趋势水稻是我国人民喜爱的主要细粮作物,它首先是产量较高。1983年我国稻谷每公顷平均产量为5092公斤,而小麦和玉米分别为2800公斤和3615公斤,水稻分别高81.7%和40.8%;建国35年来,辽宁省水稻平均单产比玉米高31%,比高粱高71.4%。其次是营养价值较高。如含蛋白质为7~10%,虽稍低于小麦、玉米,但蛋白质的生物价,大米为88%,而小麦为40%,玉米为30%;其蛋白价,大米为77%,而小麦粉为48%,大豆为55%。故稻米蛋白质是植物蛋白质中最好的。稻米粉质最细,其淀粉直径为3~10微米,而小麦为30~
