采用研究居民历年食物消费和膳食营养评价的方法,发现农村地区营养问题是蛋白质量少质差、低脂肪、维生素及铁利用吸收率低,钙、锌、核黄素明显不足,营养结构负平衡、贫血率高。提出本地区食物改革战略目标是坚持从植物性食物为主,增加豆类和动物性食物、粮菜多样化,提高营养素吸收利用率,并对实施目标做了论述。
Based on the study of residents’ food consumption and dietary nutrition over the years, it was found that the nutritional problems in rural areas are low quality of protein, low fat, low absorption rate of vitamin and iron utilization, obvious deficiency of calcium, zinc and riboflavin and negative balance of nutrition structure , Anemia rate is high. It is proposed that the strategic goal of food reform in this region is to adhere mainly to plant foods, to increase legumes and animal foods, to diversify foodstuffs, and to improve the rate of nutrient absorption and utilization, and to discuss the implementation targets.
