杂与精的平衡 “食益杂”:人体需要的营养是多方面的。从人类的进化历史看,有众多来源的食物才能满足营养平衡的需要。 日常膳食中食物的种类虽然是有限的,但在实际生活中人类摄取的谷物、蔬菜、水果与采摘的野生天然植物品种则是无限的。膳食偏简求精,实则有害无益,特别是对生长发育不利,偏食和食物过精易造成微量元素铁、锌、碘、矿物质元素钙和某些维生素的缺乏以及一些营养素的过剩。因此,除注意食品色、香、味、形以外,更应提倡食品来源的多样化。
