高职院校的职业技能大赛是推进专业发展的强大动力,西餐宴会服务既是酒店餐饮业的首要任务,又是检验酒店管理专业学生职业能力,促进高职院校教学改革的良好途径。以香奈儿Coco Mademoiselle香水发布西餐晚宴作品为例展开分析,阐述了如何设计创新有效的作品,包括构思设计主题及摆台技能训练方法,以期对高职院校及酒店行业带来一定的借鉴意义。
The vocational skill contest in higher vocational colleges is a powerful impetus to promote the professional development. The western banquet service is not only the primary task of hotel catering industry, but also a good way to test the occupational ability of hotel management students and to promote the teaching reform in higher vocational colleges. Taking Coco Mademoiselle perfume released by Chanel as an example, the article analyzes how to design innovative and effective works, including the theme of conceptual design and the skills training method of swing table, in order to bring some references for higher vocational colleges and hotel industry.
