蔬菜是一种极易累积硝酸盐的植物,其含量按干重计可达2%以上。而人类摄入体内的硝酸盐约81%来自蔬菜。因此,蔬菜中硝酸盐含量高低直接影响人体及牲畜健康。1973年,世界卫生组织对食品中硝酸盐和亚硝酸盐制订了食用限量标准,规定硝酸盐(按NaNo_3)日食用量最高为5mg/kg体重,亚硝酸盐为7mg/kg体重。沈明珠等建议将含量分为四级。其卫生性允许最低级为432mg/kg鲜重,二级<785mg/kg,三级<1440mg/kg,不允许的四级为3100mg/kg。
