测定了 6尾南美鲱鱼的含肉率及其营养成分 ,并对其营养价值进行综合评定。该鱼 (鲜样 )含肉率 83.6 5 % ;肌肉中含粗蛋白 1 7 74 % ,粗脂肪 5 2 5 % ,粗灰分 1 0 2 % ,水分 74 73% ,无氮浸出物 1 2 6 %。干物质中水解氨基酸总量 70 36 % ,其中必需氨基酸 2 7 90 % ,占氨基酸总量的 39 6 5 % ;游离氨基酸总量1 2 6 5 1 8mg 1 0 0g;必需氨基酸指数为 4 0 33;矿物质含量丰富 ,尤其是硒。认为南美鲱鱼是一种营养价值和养殖价值都比较高的淡水养殖新品种 ,具有良好的开发利用前景。
The meat content and nutrition of six South American herrings were determined and their nutritional value was evaluated comprehensively. The fish (fresh sample) contains 83.6% of the meat; the muscle contains 1774% of crude protein, 525% of crude fat, 102% of crude ash, 74% of water and 126% of nitrogen- . The total amount of hydrolyzed amino acids in dry matter was 70 36%, of which the essential amino acids 2 7 90%, accounting for 39 65% of total amino acids; the total amount of free amino acids 1 2 6 5 1 8 mg 100 g; and the essential amino acid index 4 0 33 Rich in minerals, especially selenium. It is believed that South American herring is a new breed of freshwater aquaculture with high nutritive value and breeding value, and has good prospect of development and utilization.
