目的调查冷冻肠衣携带细菌的情况。方法用16S rDNA PCR序列扩增和分析技术对2010—2012年从南通地区肠衣生产、加工企业的冷冻肠衣中分离的65株细菌进行鉴定。结果这些细菌包含了来自13个属的20种细菌,其中奇异变形杆菌(Proteus mirabils)、海氏肠球菌(Enterococcus hirae)和粪肠球菌(Enterococcus faecalis)是比较明显的优势种群。另外,许多细菌在一定条件下可引起人和动物发生疾病。结论冷冻肠衣可以携带多种细菌,应该进一步加强监测和研究。
Objective To investigate the situation of frozen casing carrying bacteria. Methods 16S rDNA PCR amplification and analysis techniques were used to identify 65 strains of bacteria isolated from the frozen casing of enteric-coated production and processing enterprises in Nantong from 2010 to 2012. As a result, these bacteria contained 20 species of bacteria from 13 genera, of which Proteus mirabils, Enterococcus hirae and Enterococcus faecalis were the dominant populations. In addition, many bacteria can cause diseases in humans and animals under certain conditions. Conclusion Frozen casings can carry a variety of bacteria, should further strengthen the monitoring and research.
