酶是生物体产生的具有催化作用的蛋白质,称为生物催化剂。它与化学催化剂有相同的性质,但各有其自身的特性,如:催化效率高,有明显的专一性,能在温和的条件下起作用,不需要高温、高压、强酸、强碱,设备简单,本身无毒,反应过程中也不产生毒物,可使生产大为简化。我们要利用酶制剂,必须了解它的特性,掌握其规律,才能收到良好的效果。为了扩大酶制剂的使用范围,现将A.S.1398中性蛋白酶,2709碱性蛋白酶和BF7658淀粉酶的有关性能介绍如下,供生产单位使用时参考。
