目的了解成都双流国际机场2008—2013年航空食品微生物检验情况,掌握双流国际机场航空食品卫生现状。方法对双流国际机场内两家航空食品公司所生产的不同类型航空食品进行微生物检验,检验项目包括细菌菌落总数、大肠杆菌、沙门菌、金黄色葡萄球菌、蜡样芽胞杆菌、产气荚膜梭菌、霉菌和酵母菌。收集2008—2013年双流国际机场航空食品微生物检验结果进行分析,使用SPSS15比较不同航空食品公司、不同样本类别、不同季节产品的合格率有无统计学意义。结果 2008—2013年共对1 158份航空食品进行了微生物检验,航食企业A平均合格率为99.23%,航食企业B平均合格率为98.43%;生菜类样本合格率为100.00%,冷荤类样本合格率为98.62%,热食类样本合格率为99.10%,糕点类合格率为99.65%,冰块类样本合格率为94.41%;1-3月份样本合格率为99.31%,4-6月份样本合格率为97.91%,7-9月份样本合格率为99.30%,10-12月份样本合格率为98.63%。不合格项目包括11份样本细菌菌落总数超标,3份蜡样芽胞杆菌超标。结论成都双流国际机场航空食品微生物检验结果总体良好,但仍存在检出蜡样芽胞杆菌超标的情况。冰块类样本检验合格率明显低于其他类型食品。因此,应加强相关产品的监管。
Objective To understand the status of aviation food microbiology examination in Chengdu Shuangliu International Airport from 2008 to 2013 and to grasp the status of aviation food hygiene in Shuangliu International Airport. Methods The microbiological tests of different types of aviation food products produced by two aviation food companies in Shuangliu International Airport were carried out. The test items included total number of bacterial colonies, Escherichia coli, Salmonella, Staphylococcus aureus, Bacillus cereus, gas- Bacteria, molds and yeasts. The results of microbiological tests of aviation food in Shuangliu International Airport from 2008 to 2013 were collected and SPSS15 was used to compare the qualified rates of different aviation food companies with different sample types and different seasons. Results A total of 1 158 aeronautical products were tested for microbes from 2008 to 2013. The average passing rate of aviation food enterprises A was 99.23% and the average passing rate of aviation food enterprises B was 98.43%. The passing rate of lettuce samples was 100.00% The sample pass rate was 98.62%, the hot food sample pass rate was 99.10%, pastry pass rate was 99.65%, ice samples pass rate was 94.41%; 1-3 month sample pass rate was 99.31%, 4-6 months The passing rate of samples was 97.91%, the passing rate of samples from July to September was 99.30%, and the passing rate of samples from October to December was 98.63%. Unqualified items include 11 samples of bacterial colonies exceeded the total number of 3 Bacillus cereus exceeded. Conclusion The results of aerofloramic microbiological tests at Chengdu Shuangliu International Airport are generally good, but there are still some cases of excessive detection of Bacillus cereus. The qualification rate of ice samples was significantly lower than other types of food. Therefore, we should strengthen the supervision of related products.
