一、贮藏原理 (一)葱头结构及保护组织 洋葱食用部分是膨大的肉质鳞茎,其结构包括茎管、膜质鳞片、生长点、茎盘、须根等几部分。收获后的洋葱外面形成2~3层膜质鳞片,具有不透气、不透水的特性,是洋葱的良好保护组织。洋葱在贮藏过程中进行呼吸作用和萌动时所需要的气体都是通过茎管供应的,茎管的粗细对贮藏效果影响很大。所以,做贮藏的品种一定要选用具有多层的膜质鳞茎,茎管较细而能自己干缩自封的品种。
