我们在“牛蛙人工养殖”的研究过程中,分析了牛蛙的一般营养成份(表1),并进行了氨基酸含量分析(表2)。 材料:本所饲养的变态后120日龄的牛蛙,将其腿肉供4次分析,并列出其平均值。 方法:水份——恒重法;灰份——茂福炉烧灼法;脂肪——索氏提取法;蛋白质——微量凯氏定氮法,总糖——3.5-二硝基水杨酸比色法;钙-高锰酸钾滴定法;磷——钼酸磷铵比色法;铁——双吡啶法;氨基酸—离子交换色谱法。将牛蛙腿部新鲜肌肉称样10mg,匀浆后用6Mol/L盐酸在110℃下水解24小时,抽酸,定容、离心,瑞典LKB4400氨基酸自动分析仪分析,由LKB3390积分录仪计算。
