在硫酸介质中,Fenton反应产生的羟基自由基使固绿褪色,丙二醛(MDA)对羟基自由基氧化固绿的反应具有抑制作用,据此提出了测定MDA含量的固绿褪色—分光光度法。在最优的实验条件下,方法的线性范围为0.083~3.33μg/mL,回归方程为△A_(625nm)=0.083 7ρ+0.020 4,相关系数为0.992 6,检出限为0.038μg/mL。方法应用于食品中MDA的测定,测定结果的RSD为1.5%~2.7%,回收率在96.2%~106.9%。
In sulfuric acid medium, the hydroxyl radicals generated by Fenton reaction fade solid green, and the malondialdehyde (MDA) has an inhibitory effect on the reaction of hydroxyl radical greening.
