①目的扇贝裙边是扇贝加工副产品,开发利用急待解决。为观察该食物资源进入正常膳食对健康人血脂水平的影响而进行本研究。②方法采用自身对照研究,选择22名正常血脂水平的21~24岁男性青年为实验对象,观察对照期和实验期各21d内受试者血脂变化。其间受试者集体就餐,实验期逐日重复对照期食谱,但每日以150g鲜扇贝裙边取代部分动物性食品,两期内均进行7d膳食调查。③结果在维持膳食主要营养素摄取量和构成比例不变的前提下,添加扇贝裙边后受试者血清甘油三酯(TG)和总胆固醇(TC)水平均有一定程度降低,血清高密度脂蛋白胆固醇(HDL-C)水平和HDL-C/TC比值均明显上升。血清HDL-C亚组分HDL2-C和HDL3-C水平升高,HDL2-C在HDL-C中所占比例也有增加;但HDL3-C/HDL-C,HDL2-C/HDL3-C比值降低,说明血清HDL-C变化以亚组分HDL2-C的增加为主。④结论在健康人正常膳食中添加一定量扇贝裙边不引起血脂升高,相反,能轻度地降低受试者的血脂水平

Results The serum triglyceride (TG) and total cholesterol (TC) levels of the subjects after receiving scallop skirts were reduced to a certain extent while maintaining the intakes of dietary nutrients and the proportions of the components. Serum high-density lipids The levels of HDL-C and HDL-C / TC were significantly increased. Serum HDL-C sub-components HDL2-C and HDL3-C levels increased, HDL2-C in HDL-C also increased the proportion; but HDL3-C / HDL-C, HDL2-C / HDL3-C ratio decreased , Indicating that the change of serum HDL-C is mainly the increase of sub-component HDL2-C. ④ Conclusion Adding a certain amount of scallop skirt to the normal diet of healthy people does not cause the increase of blood lipids, on the contrary, it can slightly reduce the level of blood lipids in the subjects
