毗邻广州的顺德,自古就是一个物华天宝、经济发达的富庶之地,浓郁的岭南文化积淀出它的深厚。顺德菜以其用量精而细、配料多而巧、装饰美而艳等特点在粤菜中颇具盛名。勒流菜作为顺德菜的代表,更是将其“清、爽、嫩、滑、鲜、真”的特点发挥到极致。然而由于推广力度的不足,近些年来,勒流菜淹没在了众多顺德菜式中。今年6月,佛山市顺德区质量技术监督标准与编码所主导制定了《顺德勒流名菜菜远炒水蛇片》、《顺德勒流名菜煎焗西江魽鱼》、《顺德勒流名菜煎焗鱼嘴》和《顺德勒流名菜水蛇羹》四项联盟标准,在对食材的选择和烹饪过程等方面都予以了标准化的规范,让名菜的色、香、味、形,从此有标可依。本期就让我们来聊聊顺德名菜与标准化的故事。
