我国南方寻常百姓家常吃的泡饭,如今已堂而皇之地走进杭州城装潢考究的酒楼饭店。在湖滨小吃一条街上,“酒旗风”是一家专营泡饭的酒楼。酒楼经理介绍,虽然是泡饭,但各大酒楼、饭庄做出来的味道,所用工艺却已不再是普通居家那样简单的“水泡饭”了,花色之多令人耳目一新,有海鲜泡饭、火腿青菜泡饭等30多种。就以海鲜泡饭为例,仅是对米饭的处理就有5道工序,还要配上12种海鲜料。杭州泡饭作为传统小吃,是江南人日常的主食,因而顾客以沪、杭人居多,也吸引了不少港台和海外游客。一位40多岁的意大利观光客,吃完后一抹嘴,指着英文菜单上的海鲜译名说:“中国燕麦粥这名字不确切,我建议还是用开胃米汤吧。”
