水苏(Stachys sieboldii Miq)属于唇形科的多年生草本植物。别名螺丝菜、宝塔菜、地蚕。原产中国北部。17世纪传入蒙古、日本,19世纪末传入德国、英国、意大利、德国、比利时、瑞士、奥洲、美国、巴西等世界各国栽培。现在我国各地均有栽培,以块茎供食或药用。 一、食用及药用价值 水苏的块茎肉质脆嫩,每100克块茎含有碳水化合物及蛋白质为15—18克,营养价值较高,可制蜜饯、酱渍、腌渍品。它是我国传统罐藏酱菜之上品。同时还有很高的药用价值,具有消炎止咳,降压和镇静作用。我国西藏当地群众自古用它治疗肺结核、高血压和心脏病都有良好效果。水苏块茎含有生物活性物质,对碳水化合物和脂肪代谢有良好影响。可降低动脉压及减轻糖尿病,使血液中的葡萄糖降低40—60%,甘油三酸脂为30%。减缓血液凝结度为70%,并降低胆固醇含量。
