锌的摄入量直接关系到机体的健康,因此,食品中锌的最大允许量,国家食品卫生标准均有明确规定。据文献报道,使用镀锌容器盛放菜籽油,发现油中锌含量增高。为此,本文作者对镀锌容器贮存菜籽油所引起的油中锌污染问题进行了15个月的实验室观察,再次证实植物油与金属锌长期接触,会导致油中锌含量的增大。其原因系油中游离脂肪酸与金属锌的化学反应所致,同时测定了菜籽油的一些物理常数与质量指标。从实验结果来看,镀锌容器贮存菜籽油不符合卫生要求,应该引起食品卫生监督部门的重视。
Zinc intake is directly related to the health of the body, therefore, the maximum allowable amount of zinc in food, national food hygiene standards are clearly defined. According to the literature, the use of galvanized containers in full bloom rapeseed oil, zinc found in oil increased. To this end, the author of the zinc container storage rapeseed oil zinc-induced pollution in the laboratory conducted a 15-month observation, once again confirmed that the long-term contact of vegetable oil and zinc metal will lead to the increase of zinc in oil. The reason is due to the chemical reaction of free fatty acid with zinc metal, and some physical constants and quality indexes of rapeseed oil were also determined. From the experimental results, galvanized containers stored rapeseed oil does not meet health requirements, should cause food hygiene supervision departments attention.
