为比较不同甘薯品种的块根在储藏过程中淀粉含量的变化趋势,对四川地区栽培的4个甘薯品种(系)在不同储藏期的鲜薯淀粉含量、还原糖含量以及淀粉酶活性进行测定.结果表明:川薯34、南薯88和力源1号在储藏过程中淀粉含量变化较大,1个月时的淀粉含量下降量超过10%,3个月时可下降30%以上;徐薯18的淀粉含量在前期下降很慢,在2个月内淀粉含量下降仅5%,整个储藏期(97d)结束时下降量也明显低于其他3个品种.徐薯18的淀粉酶含量和酶活性在整个储存期的变化不明显,而还原糖含量在储藏期的第2个月内最高.因此,与其他3个甘薯品种(系)相较,目前广泛栽培的甘薯品种——徐薯18表现出很好的淀粉耐储藏性.
In order to compare the trend of starch content in different sweet potato varieties during storage, the starch content, reducing sugar content and amylase activity of four sweet potato varieties (lines) cultivated in different storage periods in Sichuan Province were determined.
