Due to the widespread concern about the relationship between the intake of different types of fat and the incidence of chronic diseases such as coronary artery disease, diabetes, cancer and obesity, fat has been a hot issue. Dietary fat has many uses. The effects of dietary fats are often manifested by the combined effect of various fatty acids in the diet or food. This article highlights some of the latest advances in health and disease for different types of dietary oils.
