目的了解内江市食品中化学污染物的基本情况,为四川省食品安全风险监测网收集数据。方法采集32类248份内江辖区的食品,进行相关参数检测。结果猪肉中铜合格率100%,大米等食品中,汞测定值范围2.0×10-3~1.2×10-2mg/kg,铅合格率99.2%,镉合格率98.9%,馒头等5类食品20份样品中,铝总合格率为75.0%。合格率最低的是油炸面食类食品,仅为33.3%,4份油条铝合格率为0,最高超标4.1倍。金针菇中二氧化硫合格率为100%。酱腌制蔬菜、熟肉制品中亚硝酸盐合格率为84.0%,不合格食品均为熟肉制品,其亚硝酸盐合格率为73.3%。甜蜜素合格率77.3%,糖精钠合格率100%,5份葡萄酒4份果酒中,甜蜜素合格率分别为40.0%、50.0%。4份成人配方奶粉中,苯甲酸检出率为50.0%。7份酱腌制蔬菜中苯甲酸合格率100%。结论检测指标合格率最低的是油炸面食类食品中铝,其次是葡萄酒、果酒中的甜蜜素,第三为熟肉制品中亚硝酸盐。应加强食品污染和有害因素的监测工作。
Objective To understand the basic situation of chemical pollutants in food in Neijiang City and collect data for Sichuan Food Safety Risk Monitoring Network. Methods Totally 248 samples of 32 Neijiang areas were collected for testing the related parameters. Results The passing rate of copper in pork was 100%. The lowest pass rate is fried pasta food, only 33.3%, 4 fried dough aluminum pass rate of 0, the highest exceeded 4.1 times. Flammulina sulfur dioxide pass rate of 100%. In pickled vegetables, the passing rate of nitrite in cooked meat products was 84.0%. The unqualified foods were all cooked meat products, and the pass rate of nitrite was 73.3%. Sodium cyclamate qualified rate of 77.3%, saccharin sodium qualified rate of 100%, 5 wines 4 wines, sodium cyclamate qualified rates were 40.0%, 50.0%. Among 4 adult formula, the detection rate of benzoic acid was 50.0%. 7 copies of pickled vegetables benzoic acid pass rate of 100%. Conclusion The lowest passing rate of detection index is aluminum in fried pasta food, followed by sodium cyclamate in wine and fruit wine, and nitrite in cooked meat products. The monitoring of food contamination and harmful factors should be strengthened.
