目的识别和评估2010年湖南省运会食品安全可能存在的风险,确定主要风险,为政府管理提供技术支持。方法根据湘潭市2006-2009年食物中毒的特点,针对省运会食品可能存在的风险,引入澳大利亚、新西兰风险管理标准AS/NZS4360:2004进行风险评估。结果省运会餐饮环节食品安全存在的主要风险为餐饮引起的细菌性食物中毒。结论省运会期间卫生部门应把餐饮环节预防控制细菌性食物中毒作为优先管理的重点。
Objective To identify and assess the possible risks of Hunan food safety in 2010, identify the main risks and provide technical support to government management. Methods According to the characteristics of food poisoning in Xiangtan City from 2006 to 2009, aiming at the possible risks of food in the provincial games, risk assessment was introduced by the risk management standard AS / NZS4360: 2004 of Australia and New Zealand. Results Provincial Department of Food Catering food safety is the main risk of food-borne bacterial food poisoning. Conclusion During the provincial sports meeting, the health department should focus on prevention and control of bacterial food poisoning in the catering sector as a priority management.
